Protocols
Uniswap V3 is the only decoded protocol today. There is no protocol-listing endpoint yet — pool and swap endpoints are the protocol surface.
Coverage is empirical, not a static list: /v1/ethereum/pools returns exactly the pools BlockTrellis has seen emit a Swap log and backfilled metadata for, nothing pre-registered.

GET /v1/ethereum/status
Returns each ingestion pipeline's last processed block and hash. It's the honest answer to "is protocol X's data caught up right now" until a dedicated protocols endpoint exists.
